Ingredients:

  • 2 lb cucumbers, peeled and seeds removed
  • 2 garlic cloves, smashed
  • 1-2 c water
  • 2 c arugula
  • 1/4 c mint leaf
  • 1/4 c parsley leaf, no stem
  • 1/4 c cilantro leaf, no stem
  • 1/4 c basil leaf
  • 3 T red wine vinegar
  • 2 T lemon juice
  • salt to taste
  • 1/2 c olive oil
  • 2 c avocado

Directions:

  1. Cut cucumber
  2. Blend in a blender until smooth
  3. Eat chilled
