GREMOLATA: A chopped herb accompaniment used as a dressing or a garnish. Pairs well with seafood, roasted meats and poultry

Lemon peels contain as much as 5 to 10 times more vitamins than the lemon juice itself. To name a few: Vitamin C, Vitamin A, beta carotene, folate, calcium, magnesium, and potassium. Lemon peels are health rejuvenators in eradicating toxic elements in the body.

Parsley is a High Source of Flavonoid Antioxidants

Did you know… The entire “head” of garlic is called a garlic bulb, while each segment is called a clove.   Garlic is low in calorie, is a good source of protein and very rich in Vitamin C, Vitamin B6 and Manganese. It also contains trace amounts of various other nutrients. 

RECIPE: Yields about 1/4 cup

INGREDIENTS

  • 1 lemon
  • 1/4 cup finely chopped fresh parsley
  • 3 garlic cloves, finely chopped

PREPARATION

Using vegetable peeler, remove peel in long strips from lemon. Mince lemon peel. Transfer to small bowl. Mix in parsley and garlic. (Can be made 6 hours ahead. Cover and refrigerate.)
