In 2004, a study from the University of Arizona estimated that almost half of the food harvested in the United States goes to waste.
Earlier this year, the United State Department of Agriculture (USDA) issued a study that the estimated total value of food loss at the retail and consumer levels in the United States was $161.6 billion in 2010. The top three food groups in terms of share of total value of food loss were meat, poultry, and fish (30 percent, $48 billion); vegetables (19 percent, $30 billion); and dairyproducts (17 percent, $27 billion).
According to the Natural Resources Defense Council the average American family of four ends up throwing away the equivalent of up to $2,275 annually in food. See
According to the USDA:
  • More than 14 percent of U.S. households struggle to put enough food on the table — more than 48 million Americans including 16.2 million children.
  • More than one in five children is at risk of hunger.  Among African-American and Latinos, nearly one in three children is is at risk of hunger.
In 2013, the USDA released the following statistics about households that report indicators of food insecurity.

 Thanksgiving is the official start of the winter holiday season. Sharing food and dining with friends and family is a wonderful part of the many holiday celebrations in store this time of year.

Brittney Scott, MFA

Reading is Brittney’s passion, whether its fiction, non-fiction, or poetry. She received her MFA from Hollins University and is the recipient of a Joy Harjo Prize for Poetry as well as the Dorothy Sargent Rosenberg Poetry Prize. Her work was also selected for Best New Poets 2014. You can find her poems in Prairie Schooner, The New Republic, Narrative Magazine, Alaska Quarterly Review, North American Review, Crab Orchard Review, Poet Lore, and elsewhere. Her fiction has appeared in Quarter After Eight. She teaches creative writing to adults, Girl-Scouts, and high-risk youth at Richmond’s Visual Arts Center, as well as English and composition at John Tyler Community College.

5 Ways to Support the Immune System (that you can do every day!)

Even though your immune system get’s a lot of press this time of year, it’s actually working pretty hard all year long, and in the fall and winter there just so happens to be plenty of extra stressors. See, keeping your defenses strong all the time will make the process of deflecting (and recovering from) illness much more efficient. Your immune system has several essential functions like protecting against antigens (any small proteins that can cause an immune response, like pollen), fighting off foreign invaders, getting rid of damaged or dead cells and detecting cancerous or precancerous cells.) Here are a couple of long term, day-to-day practices that you can utilize all the time to enhance and support your body’s defenses.

  1. Eat pure, whole food (especially colorful fruits and vegetables). This increases the amount of food based nutrients your body is processing and absorbing so that you are not deficient in any vitamins and minerals. Most especially go for the blueberries and broccoli – these two are nutrition powerhouses.
  1. Supplement with a probiotic. A HUGE amount of your immune system resides in your gut, along with trillions of probiotics (about 5-6 pounds of good bacteria in each person). Your probiotics play a major major role in modulating your immune system, and if you’re probiotics aren’t happy then I can guarantee you that the rest of your body wont be happy either. Keeping your gut healthy and supplementing with a probiotic will help keep the “good guys” in place when stressors come up.
  1. Reduce your stress in any way you can. We all know that increased chronic stress leads to depletion, exhaustion and chronic fatigue. With depleted energy, we are often too wiped out to fight against on coming illness and more susceptible to getting the bugs going around. Make a list of your stressors in life and divide it into “in your control” and “out of your control”. The stressors that are in your control are things you can change, so make an effort to control and decrease that stress.
  1. Herbal Immune-modulators help keep your system strong. Herbal medicines are a big help in influencing any organ system in the body, and some are really good at supporting the immune system too. I like Astragalus (Astragalus membranaceus or Reishi (Ganoderma lucidum) as an immune modulator (meaning they will support the immune system – NOT stimulate it).
  1. It sounds so simple, to get enough sleep, and it’s the first thing people sacrifice in their health. If you’re not sleeping enough, your body does not have time to rest and repair and recover from every single stress filled day. While your sleeping, your body has an amazing ability to work from head to toe to replenish and repair your organ systems and enhance your immune system at the same time. Restful, restorative, quality sleep is just irreplaceable. Devote as much time as you need to this (be it 5 or 10 hours a night – you know what your body needs).

If you need some extra immune power this year, I recommend taking elderberry syrup, about 1 teaspoon a day to protect against viruses and flu strains ( I like Gaia’s Black Elderberry Syrup). Also drink some warming ginger tea to keep your body warm and to stimulate your circulation in the cold months. Extra vitamin C from citrus is helpful, too. Stay healthy, and remember to take some time off! Resting is just as important as any immune remedy.

Last week, registered dietitian/nutritionist Keri Gans, posted a blog commentary in U.S. News & World Report titled “The Case for Processed Foods.” Ms. Gan’s subtitle urges readers to “stop condemning all boxes, bottles and cans — and start being real.”  She goes on to identify eight common food additives “that you should feel OK about if they happen to appear in your grocery cart.”

Oh, if only there were eight food additives or for that matter, a few hundred food additives to monitor and learn about — but that is far from the case in today’s food shopping environment.

This past summer, Kimberly Kindy of the Washington Post, wrote a very informative article explaining how the use of food additives is rising significantly, while the agency responsible for “ensuring the safety of the chemicals streaming into the food supply” — the Food & Drug Administration (FDA) — is increasingly unable to learn about and provide effective oversight over the safety of more than 9,000 food additives in our U.S. food supply.

According to Ms. Kindy, food additives continue to enter the food supply without the FDA even being notified or in other instances the science of such food additives is being kept secret from the FDA.  Her article is scary but necessary reading. Ms. Kindy cites an example of the  correlation researchers have made between the food additive carrageenan and gastrointestinal disorders. Unfortunately,  the FDA’s refusal to take such research seriously is one example of the FDA’s many serious shortcomings in its work in ensuring food safety.  Consequently, the use of carrageenan in food products is on the rise (especially health oriented and vegan related products).

By the way, I avoid carrageenan in all products I buy. Look for it in soy, almond, rice, hemp and similar milks, among other products.  Another good reference on food additives to avoid is an article by Martin Downs for WebMD regarding the dangers of 7 Common Food Additives.

Last week, food market analysts reported that the global market for food additives is expected to exceed 36.1 Billion US Dollars by 2018. Read more here.

Americans are digesting food additives that have not been reviewed by the FDA. This a serious risk for all Americans.  Whether health risks are occurring from the consumption of such food additives cannot be known until it’s too late.  Even worse, where slowly developing health problems occur, the causal correlation to any specific food additive may never be known.

The Bottom Line:  consumers need to read labels and make conscious choices about purchasing products containing suspicious food additives. Take the time to learn about the food additives in commonly purchased products. Avoid unknown food additives wherever practical and possible.

Don’t Chuck That Shuck!


With the Governor declaring November the Official Oyster Month in Virginia, what better time to announce our new partnership with the Virginia Oyster Shell Recycling Program!

Bring your oyster shells to our Meat & Seafood Department and we’ll return them to VA Oyster Shell Recycling Program at the VCU Rice Rivers Center.  Once received, VOSRP’s begins the process of returning them to the Chesapeake to grow new oysters and help restore the Bay. Continue reading
