Freekeh (sometimes spelled frikeh) or farik, is a cereal food made from green wheat that goes through a roasting process in its production and is an Arab dish. Freekeh is generally free from chemicals, GMO, coloring, additives or preservatives. It is also naturally rich in potassium, protein and calcium. The wheat is harvested while the grains are yellow and the seeds are still soft; it is then piled, sun-dried and roasted. The thrashing and rubbing of the seeds during the sun-drying is where this food gets its name, farīk or “rubbed” to make the flavor, texture, and color uniform.
Green Wheat Freekeh can be used in a variety of ways:
- as a side dish (prepared and served like rice)
- as an ingredient in soups and stuffings
- with vegetables as a salad ingredient
- in vegetarian burgers
