Graskaas! Yum Yum

It just arrived yesterday.. and we just cut it and put it out this afternoon. Beemster’s Graskaas. And what’s so special about this funny sounding named cheese? Well, let me tell you. It’s the first milking of the herd of Beemster, when the cows are let out onto the spring pastures after a long winter. The name Graskaas means ‘grass cheese’ and you are tasting the yummy sweetness of the spring grass.
It’s only aged one month, which makes it still a young cheese, but it is rich creamy, buttery, and yes even a little grassy. There are only 2000 wheels made each year.. and we have three of them. So, come celebrate summer time by enjoying spring made cheese.
