Getting Local Food into Cafeterias

I remember growing up in rural Buckingham County, the public school lunch was often always a “meat” dish, some sort of potatoes, an apple (optional), French fries, and chocolate milk. However recently, The Clarke County Economic Development Advisory Board wanted to know if the county’s school system could purchase local food.
What a great idea. Serve as much local food as possible to the thousands of students. What a fantastic way to give the local farmers more business and encourage growth in the community.
However there are plenty of speed bumps along the way when it comes to introducing local food into the public school system. Public school lunch programs are pretty strict about what they do and do not allow in the menu.
