new cheesemonger in ET

Hello ET family and friends
Let me introduce myself, my name is Dany. Although I have with ET for 5 months now, I just started in my role in Indulge. Cheese is my passion and background. I recently moved back to Richmond after spending the last 8 years in San Francisco pursuing my passion in Cheese. I look forward to writing about cheese, answering any questions anyone might have. I am planning to be teaching classes at the store, if anyone has specific questions or topics they wish to see discussed feel free to let me know. I’m in the cheese dept, you can email me at dschutte@ellwoodthompsons.com or post comments to this post.

Hi Dany!
Can’t wait to see what you blog about!

I have a question about cheese, specifically: does ellwood get all of it’s cheese locally? It would be cool if you could report on a dairy thats doing it!

Hi Zvi

Good question, but in the world of cheese, it would be really impossible to be completely local in cheese. Especially in the US. Although there is an amazing amount of domestic cheeses being made, there is just too many “required” cheeses to have in a good selection that are only made in other places in the world.

But more direct to your question, we do have a nice selection of Virginia cheeses. As more become available throughout the summer that selection will only expand to more. The thing about smaller farmstead production cheeses, when managing the animals there usually a time during the year when milk is not available for cheese making. Babies are being born and the milk must go to their needs.
